After his time in the kitchen of the renowned Zuberoa restaurant, where he delved into traditional Basque cuisine, Goikoetxea opened Rola in his hometown with the sincere vocation of offering intimate cuisine that combines flavor, tradition, and freshness.<\/p>\n<p style=\"font-weight: 400;\">With a varied array of dishes and a first-class tasting menu (which can be paired with txakoli wines from Biscay), the chef serves up creations such as: <em>txangurro<\/em> (spider crab) and prawn ravioli in its consomm\u00e9; poached egg yolk with mushrooms and foie gras emulsion; suckling pig confit prepared at a low temperature and served with fruit chutney and mashed potatoes; roasted pigeon with turnip mousse and tomato compote; steamed pilpil-style hake with a seasonal vegetable sauce; Lobster ajoarriero (stew) served with a lobster head emulsion; and cheesecake with hibiscus ice cream and red fruits.<\/p>\n<p style=\"font-weight: 400;\">To accompany these delicacies, the wine list at Rola includes more than 150 options ranging from old vintages, numbered wines, organic wines, local wines, a varied collection of txakoli wines from Biscay, as well as the great Spanish national wines par excellence. The txakoli Hobe 2019 by Doniene Gorrondona, La Vejera 2019 by Gil Berzal, Vega Sicilia 2018, Vallegrande Barbaresco 2020 by Ca\u2019 del Baio Azienda Agricola, Alabaster 2020 by Teso La Monja, Rem\u00edrez de Ganuza Reserva 1994, Pingus 2019, JG Bourgogne Orane 2020 Eco by J\u00e9r\u00f4me Galeyrand, Janeo Paradisuak Muskiz 2021 by Itsasmendi, Brut R\u00e9serve by Billecart-Salmon, and the Sea Passion and Sea Soul underwater wines by Crusoe Treasure are just some of the most desirable options.<\/p>\n<p style=\"font-weight: 400;\">The cozy dining room at Rola, which fuses the bones of the century-old farmhouse in which it is located with more modern lines, offers a beautiful view of the Basque coast, its intense greenery, and the navy blue of the Cantabrian Sea.
