The starters are also from the grill: oysters with Per Sé Naccarii caviar, sea anemone from the Bay of Biscay and Codium seaweed vinaigrette with Aizarnazabal kiwi, sweet pepper with cured egg yolk and tuna belly salad, as well as the famous Erreka, consisting of a pintxo of home-smoked and marinated rainbow trout from Yesa reservoir with river plankton, marinade emulsion, and tomato ice cream.
