
Honoring the family, honoring the masters, and honoring tradition are the three principles that are unequivocally complied with at Saltxipi. This restaurant in San Sebastián strictly follows the formula that usually leads to success in any family project: to transmit the legacy, maintain the essence, and perfect the heritage as much as possible. It was Grandfather Santi who sowed the seed with his artisan cider, but it was his daughter Ana Mari and her husband, Javier, who opened in 1973 what is now considered one of the best restaurants in the city. Located in the Ategorrieta District, just a few steps from Zurriola Beach, in a building of traditional Basque architectural style, Saltxipi features several dining rooms that are joined by cozy private rooms and a terrace surrounded by greenery to allow guests to breathe the fresh air that comes from the Cantabrian Sea.
In the kitchen, they prepare traditional Basque food with good ingredients, brilliant technique, and great service. A clear example of this is their à la carte menu, as well as their seasonal set menus (available in spring, fall, and winter). From the sea, noteworthy are the fish kokotxas casserole with clams, spider crab meat croquettes, hake in a green sauce, grilled monkfish, and the baked spider crab meat – they even have their own hatchery. And as far as dishes from dry land, you must try the sirloin steak and the grilled txuleta sirloin, or the grilled fresh foie.
At Saltxipi, they have worked in the kitchen an entire lifetime striving to enliven flavors, to fuse them with aromas, and to enhance taste – because they know that everything tastes different on the traditional, open grill. It is impossible to match the aroma and flavor that the grill gives to the ingredients without hardly modifying them. That is the essence of this establishment’s gastronomy: simplicity raised to the category of art. Today it is Jon, a member of the family’s new generation, who watches over the grill and helps to keep this legacy alive – a legacy that turns 50 in 2023. Congratulations!
