
Located in the Arima Hotel & Spa in San Sebastián, the Misura restaurant invites diners to discover true market-fresh cuisine in a privileged setting next to the Miramón forest. Having deep respect for local, in-season ingredients, their dishes are a reflection of the cycles of nature, prepared in an open kitchen where the embers enhance the flavors of each and every creation.
The menu, in constant evolution, adapts the flavors of each season to bring the best of the land to the plate. This is a sensory experience that combines the quality of fresh ingredients with the mastery of grilling, offering a proposal that stands out because of its authenticity and connection with nature. Starters such as the casserole of chard stew with Eskutxi cheese and plum cream, the Bouchot mussels with confit garlic, txakoli, orange, and pajal pepper, and the cream of boletus with poached egg and hazelnut pesto, confit garlic shoots, and chervil all give way to the aromas of the grill: the turbot steak with confit artichokes and Bilbao-style sauce, the aged cow entrecôte with mashed grilled potatoes and cider-braised red peppers, and the low-temperature octopus with paprika foam, crispy corn, and celery root.
Among the main dishes we can find the confit pork secreto on buckwheat couscous with raisins, almonds, and Reineta apple cream, the flame-grilled hake with lemongrass butter and Navarre pochas (beans) with tomato, as well as the creamy risotto with wild mushroom ragout, Bigel cheese, and black truffle from Matarraña.
The finishing touch is provided by the caramelized puff pastry with vanilla custard, salted caramel sauce, and pantxineta ice cream, the cream puffs with chestnut cream, milk chocolate, and pears, and the essential Bergamot tartlet with lemon meringue and yuzu ice cream.
The wine list includes classic labels and surprising finds, such as the whites Bermejo Seco Ecológico 2022 and Tormenta 2021, the reds Roda I 2018 and Cobrana 2022, as well as the orange wine Mondo 2021.
