As the first days of summer arrive, the Hôtel du Palais in Biarritz, one of the most iconic properties on the Basque coast, unveils a new season shaped by exceptional gastronomy, the art of living, and the enjoyment of its privileged setting. Once the summer residence of Empress Eugénie de Montijo and now part of The Unbound Collection by Hyatt, the historic palace is introducing a range of experiences designed to make every moment memorable.
Among the season’s highlights is Lounge Eugénie, a Japanese-inspired venue overlooking the sea. Guests are invited to savor a refined culinary experience influenced by Japanese cuisine while taking in panoramic ocean views. The experience is further elevated by a selection of signature cocktails created by Jérémy Lauilhé, recipient of the prestigious Meilleur Ouvrier de France Bartender title. Its relaxed atmosphere and exceptional location make it one of the summer’s most appealing destinations.
Another centerpiece of the season is Le Sunset, whose terrace overlooks the Bay of Biarritz. Here, the menu celebrates seafood, grilled specialties, and Mediterranean flavors, creating a dining experience perfectly suited to long summer evenings by the water.
Weekends also mark the return of the hotel’s popular Garden Parties. Every Saturday and Sunday, the terrace becomes a gathering place where guests can enjoy meats, fish, and vegetables prepared on the plancha and barbecue, complemented by a generous buffet of appetizers and desserts, as well as a carefully curated program of live music.
The season is completed by the renewed partnership with Maison Dézamy, the renowned artisanal ice cream maker from the French Basque Country. Located next to Le Sunset with direct access from the Grande Plage, the Glacier du Palais offers a selection of ice creams crafted with locally sourced ingredients. Among the exclusive creations is the Mandarin and Honey flavor, conceived as a tribute to the hotel’s imperial heritage and to Empress Eugénie herself.
