
Patxi and Ramón are the founders of Heredad Beragu, a boutique hotel located in Gallipienzo Antiguo and aimed at an adult audience where everything revolves around people. Guests come to this ancient, almost deserted medieval village to spend time with their companions, to talk, to relax, and to be pampered by the magnificent hosts. A few years ago, Patxi and Ramón had the courage to start a hotel business by joining four adjoining houses, thus achieving a total surface area of 800 m2 distributed into nine double rooms, a lounge with a fireplace, and a restaurant. Construction of the hotel was carried out using 90% recovered materials: stones, beams, and columns made from varieties of wood that are local to the region, lime and sand mortar, floors featuring handmade clay tiles, hydraulic tiles, Arabic tiles, old brick, and walls featuring lime mortar and natural dyes. This sustainable spirit was also applied to energy consumption, as the establishment uses biomass and solar energy.
In the comings and goings of hotel guests, the hosts at Heredad Beragu once got the chance to meet Raquel and Ivan, the owners of the nearby Caudalia Wineries. They got along so well that they decided to join forces and create a wine together, called Indusi after the stream that runs through Caudalia’s vineyards and reaches Gallipienzo. Indusi is a coupage from the winery’s best barrels; a blend of Garnacha, Syrah, and Cabernet harvested by hand that results in a select and sophisticated wine. In addition, Heredad Beragu and Caudalia have jointly designed a food and wine experience consisting of a visit to the winery with a tasting of its most exclusive wines, two nights’ accommodation with breakfast at the hotel, a special culinary gift, and a four-course dinner at the hotel prepared with Reyno Gourmet brand products and paired with three wines selected by the winemakers.
The use of high-quality products is a priority in the kitchen at Heredad Beragu. The ingredients used are local, purchased directly from the producer or at local markets, thereby contributing to the local economy/production method and preserving the gastronomic traditions of the area. Likewise, Heredad Beragu has an ecological vegetable garden and chicken coop to supply the restaurant (and it is for exclusive customer use). The result? Extraordinary dishes such as vegetable lasagna with porcini mushrooms, cod stew, cod in pil pil sauce, squid in onion sauce, duck thigh confited, and veal oxtail in San Martín red wine (Navarra D.O.). All this is accompanied by impressive views of the Kaparreta Nature Reserve. The overwhelming power of this natural setting, combined with the human (and culinary) quality of the hosts, make Heredad Beragu a first-class destination for couples looking to listen to each other, reconnect, enjoy, and toast.
