
Gran Reserva is the wine and food space of Palacio Tondón, a 33-room hotel located in Briñas, belonging to the Autograph Collection, one of the premium brands of the Marriott International hotel chain. Gran Reserva has an indoor dining room and a spectacular terrace on the banks of the Ebro River where diners can relax, have a glass of wine, chat, eat, and enjoy some dolce far niente.
The establishment’s culinary proposal, focused on traditional cuisine and based on local products, begins with starters such as Autol mushroom croquettes with a touch of shrimp casserole, lamb torreznos with corn cream and pickled mini-vegetables, green Rincón de Soto pear salad with nuts and Los Cameros cheese, and semi-cured Ebro trout carpaccio with a nut and citrus fruit vinaigrette. From the sea, there is the grilled sea bass atop wild mushroom stew and fried capers, the cod confit atop a Riojan-style sauté, and the red tuna taco parmentier and black olives. The meat menu includes roasted and confit suckling lamb shoulder with Riojan peppers, grilled sirloin atop Riojan parmentier and vermouth reserva sauce, truffled poularde atop creamy sweet potato and hen demi-glacé, and Spanish T-bone steak with fried Gernika peppers and sliced potatoes. The sweet touch is provided by the San Cornelio orange sorbet with Riojan grape juice and spiced crème Chantilly, as well as the caramel pudding –consisting of a date cake bathed in salted caramel sauce– with meringue milk ice cream.
As expected of an establishment of this caliber, Gran Reserva has an amazing list of white, rosé, orange, red, and sparkling wines that come from the surrounding wineries. Whites like Viña Tondonia Reserva 2014 and Remelluri 2020 and reds like La Rioja Alta Gran Reserva 890 Cosecha 2010, El Bosque Sierra Cantabria 2021, Macán 2018, and Castillo de Ygay Gran Reserva 2011 are just a few of their treasures. There is also an extensive range of beverages available by the glass, such as C.V.N.E. White Reserva 2019, red wines like Manuel Quintano Cepas Viejas 2021 and Castillo de Mendoza Reserva 2018, and even historic drinks like mead from the town of Briñas.
