
Is it possible to bottle the essence of the Cantabrian Sea in a fresh wine with balanced acidity? From Hondarribia to Mutriku, passing through towns like Orio, Zarautz, Deba, and –of course– Getaria, stands an impressive 443 hectares of vineyards along the coast and in the interior of Gipuzkoa. It is on the slopes caressed by the sea breeze where the wines of the Getariako Txakolina Designation of Origin are born. These delicious and suggestive wines represent the hard work and legacy of 36 wineries, some of whose history dates back centuries.
All of them make a limited number of bottles which can be distinguished by the numbered seal placed at the top, above the capsule. Their reason for being? To preserve the land with care and to respect its idiosyncrasies, doing so not only to get a good txakoli wine but also so that future generations can, too, live from the land. The goal is to be able to communicate with emotion by bypassing intellect and finding a language of flavors that allows us to do so.
Neophytes must know that Getariako Txakolina Designation of Origin wines are made with two native grape varieties: Hondarrabi Zuri (white grape) and Hondarrabi Beltza (red grape), although the use of other white varieties is also allowed, such as Hondarrabi Zuri Zerratia (Petit Courbu), Izkiriota (Gros Manseng), Riesling, and Chardonnay. These authorized varieties have a limited surface area, and as a whole they cannot exceed 20% of the vineyard for each registered winery. The uniqueness of all these notes is characterized by the soft intensity of their flavor.
From its headquarters in Getaria, the Regulatory Council for the Designation of Origin ensures that the source of the native grapes (the Hondarrabi Zuri and Hondarrabi Beltza), their careful preparation, and quality control all come together to give the consumer the guarantee of a good product.
In addition, on the Designation of Origin’s website, they suggest several walking tours to get to know the different wineries and the beautiful landscapes that surround them. Undoubtedly, this is a perfect plan to discover why this fruit in liquid form has been able to freely seduce the most demanding palates both deeply and emotionally.
