
Eneko Atxa’s career is a story that has been cooked up based on honesty, creativity, and great effort. After becoming one of the youngest chefs to obtain his third Michelin Star (for his restaurant Azurmendi), his cuisine has grown and evolved, giving way to new innovations developed by him both nationally and internationally: in Larrabetzu, Bilbao, Madrid, Seville, Tokyo, and Karuizawa. For his gastronomic space in Bilbao, known as Eneko Basque and located on the rooftop of the five-star Radisson Collection Hotel, Gran Vía Bilbao, the chef proposes traditional Basque recipes with local nuances – all presented in the form of two tasting menus and a set menu that features top-notch dishes.
The mushroom duxelle with mushroom foam, the wheat stew with farmhouse egg yolk and crispy corn, the fried hake tempura with green cockle sauce and a parsley emulsion, the grilled beef sirloin with Idiazabal pesto, and the caramelized French toast with homemade meringue milk ice cream are just some of the delicacies dreamed up by the chef for this restaurant.
