Biarritz’s flagship Hôtel du Palais has announced the arrival of its new executive chef Christophe Scheller and is preparing to reopen its restaurant La Rotonde this May. Featuring its grand dining room with panoramic views of the Atlantic Ocean, the restaurant will offer authentic and refined cuisine while retaining its five-star service. “We can’t wait to unveil our great new restaurant, which will be open to everyone, and especially to the people of Biarritz. The demanding professionalism of chef Scheller, whom we are delighted to welcome to our team, and his solid experience will be important assets in our ongoing quest for excellence to ensure the success of this project,” explains Vincent Poulingue, General Manager of the Hôtel du Palais.
Christophe Scheller, 39, a native of the Paris region, began his career in 2001 at the Royal Monceau hotel in Paris, working alongside chef Christophe Pelé, who passed on his passion for cooking. A few years later, he became sous-chef at the Arôme restaurant in Paris, which, with its chef Thomas Boullault, was awarded a Michelin star. In 2011, he assisted chef Thierry Marx in the opening of the Mandarin Oriental in Paris; the hotel received the Palace distinction two years later. In 2013, chef Scheller began his career at Hyatt by joining the Park Hyatt Paris-Vendôme -a Parisian Palace located on rue de la Paix- and joining Michelin-starred chef Jean-François Rouquette’s team as first sous-chef. After working together for four years, he took his first head chef position at the Hyatt Regency Chantilly, where he opened the restaurant. In 2018, he won the Good Taste Series, an international culinary competition celebrating Hyatt’s culinary talents. Heading a brigade of more than 50 people, he has been executive chef since 2021 at the Hyatt Regency Paris Etoile, a 995-room hotel adjacent to the Palais des Congrès in Paris.

I hope that together we can continue to write the culinary history of La Rotonde, which has always attracted both Biarritz residents and international travelers to its dining room.” Chef Christophe Scheller joined Hôtel du Palais as executive chef in March 2024.
