Intimate, warm, elegant, surprising. That is Artean, a restaurant located in Gros (one of the most fashionable districts of San Sebastián), just a few meters from the Kursaal Convention Center and Zurriola Beach. 12 diners –and not one more– can enjoy this unique experience gathered around a bar every lunchtime and every evening. There are no tables in this restaurant. Instead, there is just a single bar that serves as a meeting point between the chef and the diner, between gastronomy and enjoyment. Snippets of cultures, flavors, and trips come together in a type of cuisine that varies depending upon the seasons and the availability of local ingredients.
There to welcome diners are Germán and Anali, two chefs of Peruvian origin who have worked in renowned restaurants like El Celler de Can Roca, Dani García, Bibo Madrid, and Kokotxa. Their vast experience has helped them to design a menu that changes in accordance with the local products available at each time of the year, featuring dishes as unique as the crab causa (a Peruvian mini-casserole with a potato-based top and bottom) accompanied by potatoes seasoned with lime and yellow chili; the steamed roll stuffed with Iberian pork, kimchi mayonnaise, and pickled beets; and the hamachi flower with miso sauce. The finesse and delicacy of these dishes pairs perfectly with their flawlessly designed wine list.
The atmosphere that emanates from the bar at Artean is like that of no other restaurant: it features a sophisticated undertone of complicity between the 12 diners, all of whom discover with joy how the bar concept has been taken to the level of haute cuisine, dissociating it from its traditional conceptualization.
