
The small village of Entrena, just a few kilometers from Laguardia and Logroño, watched chef Diego Rodríguez growing, just as he saw, in his own village, the birth of a project that would change his life forever: Finca de los Arandinos. This hotel and winery was to become the home of the Tierra Restaurant, a place where chef Diego Rodríguez would be able to unleash what he had learned in the kitchens of renowned chefs such as Martín Berasategui, Ferran Adrià, Michel Bras, and Francis Paniego. His extensive experience and the love that he feels for the ingredients of his region have helped him to create one of the most applauded local menus.
Chef Diego combines light foods with lush flavors, seeking a balance between the tastes of yesteryear and more modern flavors, always respecting the aesthetics of popular cuisine. His menus include the essence of the local cuisine – the cuisine of his rich and generous region. It’s a tribute to the area’s history and its people. His food items, the majority of which are zero kilometer products, have unique names: Luis the artisan butcher, Eduardo’s lambs, the Revuelta family’s vegetables, the Álvarez family’s fruits, Fernando the master ice cream maker, Juan Ángel the pastry chef, Rodríguez the baker, etc. Ingredients of utmost quality are used to make his mythical “Uncle Félix’s Choice” leek bouquet with white garlic, the “chamarito” lamb meatball with garlic and parsley parmentier, and his famous Chateaubriand.
His dishes are likewise paired with the wines made at the Finca de los Arandinos Winery: El Conjuro, Viero, Malacapa, Tejar, Crianza, and Reserva. Excellent wines with lasting flavors whose red varieties feature the Tempranillo, Carignan, and Grenache grapes and whose white varieties feature the Viura, Tempranillo Blanco, and Grenache Blanc grapes, all of which have been harvested from the 26 hectares of Family vineyards that surround the hotel. These 26 hectares of paradise on earth, which can be seen from the restaurant, are yet another ingredient that makes for an exceptional culinary experience at Tierra. This is a must-see stop on the roadmap of any foodie.
