The recently opened Misura Restaurant of San Sebastian, located in the Arima Hotel, delights diners from the time they arrive with its spectacular views of the Miramón Forest. It’s a natural oasis in the middle of the city that has opted for an original and authentic culinary selection.
Inspired by the use of ecological ingredients, Misura offers cuisine that is suitable for all tastes: vegans, vegetarians, ovo-lacto vegetarians, those who eat meat, and the gluten intolerant, among others. Each and every one of its ingredients is selected based on a clear premise: they must be ecological; that is to say, from natural agricultural production in which chemicals have not been used. The restaurant seeks natural processes that do not alter the food’s taste and properties.
Misura’s kitchen likewise leaves nothing to hide, as it can be seen by the diners through a large glass panel, so that they can experience and enjoy the culinary art from their tables. Being able to see how the dishes are prepared –such as the rabbit royale with roasted tomato, shallot confit with seaweed, and cabbage and bean confit with flavorings from Maghreb– is a show that is just as delicious as the food itself.
The drinks menu is also true to the restaurant’s philosophy and includes products that share in the view of spectacular ecological choices, such as Tanuki Bob, biodynamic wines such as Arbois Savagnin en Amphore, and natural wines like Gevrey-Chambertin en Vosne.
Gourmet advising is the responsibility of chef Xavier Pellicer, who helped to get the renowned Abac in Barcelona off the ground. The former head chef from the Hotel de Londres y de Inglaterra, Sebastián Eskamendi, is now Pellicer’s travel mate, in charge of daily operations at Misura. These are four expert hands that take on innovative cooking which seeks to recover authentic flavors through dishes that surprise diners with their uniqueness, aesthetic appearance, colors, and natural taste.
